Connecting to the Earth through Food
Pollyanna Forster of Pollyanna Productions has been a favorite of Chefs in the Gardens guests for multiple seasons. Her style of introducing cooking techniques, new products or local purveyors help attendees discover new ways to create in their kitchens.
As this years’ final Chefs in the Gardens season presenter, she introduced attendees to Olio Desiderio and Balsamico. Below are additional details about the products and how to order.
At Terra Madre Wine Imports & Italiana, Vail Valley based import & distribution companies, we are committed to working with high quality, artisanal producers of Italian wine & specialty food products that are dedicated to preservation of their terroir and to sustainable craft. At Terra Madre, we strive to find unique, small volume organic products from Giuseppe’s homeland, that are otherwise overlooked by large distribution companies.
Olive Oil: Olio Desiderio is from a Piemontese family that has been in the olive oil business for over 60 years, with high quality, artisanal blended and monoculture oils & Piemontese artisanal products. Since they are so unusual and are of high quality, the monoculture (single olive variety) oils are particularly special! Desiderio’s olive oils are all Italian extra virgin & made with only one olive variety, or cultivar, to produce an oil with characteristics unique to the terrior in which the variety is grown. $30/bottle.

Balsamico: Produced in the countryside of Reggio Emilia, Italy, the Antica Acetaia Mandrio has over one hundred years of history and was founded by current owner Anselmo’s great-great-grandfather. The selection of grapes, typical of the region (including varieties such as Trebbiano, Lambrusco, Salamino, and Ancellotta from their vineyards called Ponte Amarena) reflects the expertise accumulated over generations in this field. These grapes are cultivated and harvested by the family of skilled farmers in their own vineyards.
On the same day of harvest, they undergo pressing and cooking, following a seamless workflow. In the vineyard, the harvest is entirely done by hand, with grapes carefully selected in the moment. This attention to detail is reflected in the final result: a grape harvest that has never been mechanically pulled, but rather handpicked with care and passion. Packaging is entirely artisanal, ensuring maximum attention and dedication to the creation of products of the highest quality. $42/bottle of 12 year aged balsmico.
