Lobster Rolls

Ingredients Amount Amount Amount
Lobster meat, cut into bite size pieces 1 lb    
Mayonaise 1 Cup    
Tabasco 1 tbsp    
Lemon juice, fresh 1 ea    
Lemon zest 1 ea    
Tarragon, chopped 1 sprig    
Split top buns 4    
Iceberg lettuce, shredded About ½ head    
Salt To taste    
Pepper To taste    
       
       
       
       

Procedures: In a small mixing bowl, combine mayo, tabasco, lemon juice & zest, and tarragon. Check for seasoning and adjust with salt and pepper. Lightly toss the the lobster meat in the dressing and spoon into the buns. Add lettuce to taste and enjoy.
